I am so very excited to share a lemon bar recipe with you!

I surprised my dear mother for mother’s day last weekend and made these amazing bars for Sunday night dessert with the fam bam.  They loved them. Sweet Success.

You’ve gotta make these asap.

Big Sur Lemon Bars a la Jenna (

1 cup all purpose flour

1/4 cup confectioners sugar

1/4 tsp sea salt

1 stick cold butter

for the lemon filling:

1 1/4 cups granulated sugar

1/4 cup all purpose flour

4 eggs

2 tsp lemon zest

2/3 cup freshly squeezed lemon juice

additional confectioners sugar for dusting

Preheat oven to 350. To make the crust, combine the confectioners sugar, flour and sea salt in a large bowl. Cut in the cold butter and work with your fingers until the mixture resembles cornmeal. Press into a greased nine inch pan and bake for 20 minutes, or until golden.

To make the filling, whisk together the granulated sugar and flour in a bowl. Add the eggs, one at a time, whisking well after each addition. Add the zest and the juice and mix until everything is smooth and combined. Pour filling over hot crust and return to oven to bake for another twenty minutes. When done, the filling will no longer jiggle. Let cool completely in the pan before slicing and dusting with powdered sugar.


This week has been super busy, but definitely productive.  I headed down to the farm today in hopes of securing some volunteer time during the summer. I left with a full fledged internship. I couldn’t be happier.  My summer is now going to consist of:

-teaching kids about nutrition!

-snapping photos at the farm and creating publications and a blog

-maintaining the blog with even more recipes and day to day musings

-physics for 10 weeks!

Just gotta get through a few more weeks of spring quarter…
