Juicing.

This post is way overdue, but life has a tendency to get in the way sometimes 🙂 Since my last post I have become the proud owner of a Nikon DSLR. I am beyond excited and cannot wait to start cooking and photographing various meals! I had two midterms this past week and I am definitely looking forward to a bit of downtime where I can finally start tackling the 50+ recipes that I’ve been accumulating in my bookmarks bar.

Towards the end of the summer I was so excited to meet up with one of my close friends from high school, Monika. (Hi!) In the last year or so she’s been raving about the fresh fruit and vegetable juices she’s been making each morning. When we met up one afternoon I was ecstatic when she suggested making one of these infamous juice. She started naming off ingredients; apples, oranges, limes, grapefruit, jalepenos. Wait jalapenos? I hesitantly tried the finished product, complete with jalapenos. I was in love.

This juice was the perfect complement to a hot summer day. Yum.

We also concocted a summery vegetable salad with cucumbers, tomatoes, bell peppers, olive oil, balsamic vinegar, salt and topped with feta cheese.
