Day 8: Favorite Color

One of my favorite colors is yellow. Especially the deep yellow of these deliciously tart lemon bars.
Make these!

Santa Cruz Lemon Bars
1 cup all purpose flour

1/4 cup powdered sugar

1/4 tsp sea salt

1 stick cold butter

for the lemon filling:

1 1/4 cups sugar

1/4 cup all purpose flour

4 eggs

2 tsp lemon zest

2/3 cup fresh lemon juice

additional powdered sugar for dusting

Preheat oven to 350. To make the crust, combine the flour, powdered sugar, and sea salt in a large bowl. Cut in the butter and combine with your fingers until the mixture is semi-crumbly. Press into a greased nine inch pan and bake for about 20 minutes, or until golden.

To make the filling, whisk together the sugar and flour. Add eggs, one at a time, whisking after each addition. Add the lemon zest and the lemon juice and mix until everything is smooth. Pour filling over hot crust and return to oven to bake for another twenty minutes. When done, the filling will no longer jiggle. Let cool completely and then dust with powdered sugar.
